    Prepare the Filling

    In a large mixing bowl, combine the shredded chicken, black beans, corn, red bell pepper, green onions, shredded cheese, cumin, chili powder, salt, and black pepper. Mix until well combined.

    Assemble the Egg Rolls

    Lay an egg roll wrapper on a clean surface with one corner pointing towards you. Place about 2-3 tablespoons of the filling mixture in the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides and roll up tightly. Seal the edge with a little water.

    Cook the Egg Rolls

    Heat a large skillet over medium heat and add enough oil to cover the bottom. Once hot, place the egg rolls seam-side down in the skillet. Fry for 3-4 minutes on each side until golden brown and crispy. Remove and drain on paper towels.

    Prepare the Dipping Sauce

    In a small bowl, combine 1/2 cup of salsa and 1/4 cup of sour cream. Mix until well blended.
