Cooking Instructions

  1. 1

    Prepare the Bean Mixture

In a mixing bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.

  2. 2

    Combine Ingredients

Add the cooked quinoa, breadcrumbs, shredded Pepper Jack cheese, chopped bell pepper, red onion, minced garlic, cumin, chili powder, salt, and black pepper to the mashed beans. Mix until well combined.

  3. 3

    Form the Patties

Divide the mixture into four equal portions and shape each portion into a patty.

  4. 4

    Cook the Patties

Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until they are golden brown and heated through.

  5. 5

    Assemble the Burgers

Place each patty on a burger bun, top with a lettuce leaf and a generous drizzle of Creamy Baja Sauce.

  6. 6

    Serve with Pico De Gallo

Serve the spicy veggie burgers with a side of Pico De Gallo.
