Prepare the Tartar Sauce

In a small bowl, mix together 1 cup of mayonnaise, 1 tablespoon of chopped pickles, 1 teaspoon of lemon juice, salt, and pepper to taste. Set aside.

Prepare the Battering Mixture

In a large bowl, combine the flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold beer or sparkling water until smooth.

Heat the Oil

In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Batter and Fry the Cod

Dip each cod fillet into the batter, ensuring it is fully coated. Carefully place the battered fillets into the hot oil and fry for about 4-5 minutes or until golden brown and cooked through. Remove from oil and drain on paper towels.

Assemble the Sandwich

Toast the burger buns lightly. On the bottom half of each bun, place a leaf of lettuce, followed by a fried cod fillet, a slice of fresh tomato, and a generous dollop of tartar sauce. Top with the other half of the bun.

Serve the deep-fried Atlantic cod sandwiches immediately while hot, with extra tartar sauce on the side if desired.
