1. Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into fries (about 1/4 to 1/2 inch thick).
2. Fry the Bacon
In a skillet over medium heat, cook the bacon until crispy. Remove from the skillet and drain on paper towels. Once cooled, crumble the bacon into small pieces.
3. Fry the Potatoes
In a large pot, heat oil for frying (about 350°F/175°C). Fry the potato strips in batches until golden brown and crispy. Remove them with a slotted spoon and drain on paper towels. Season with salt and pepper to taste.
4. Combine Ingredients
In a large bowl, toss the hot fries with truffle oil, crumbled bacon, shredded Parmesan cheese, and chopped scallions until evenly coated.
5. Serve
Serve the Bacon Truffle Fries hot, garnished with extra Parmesan and scallions if desired. Offer additional Truffle Aioli on the side for dipping.
