Preparation and Assembly
Prepare the Onion Rings
Peel the onions and slice them into thick rings. Separate the rings and set them aside.
Make the Batter
In a mixing bowl, combine the flour, cornstarch, baking powder, salt, black pepper, paprika, and cold water. Mix until smooth.
Heat the Oil
In a deep fryer or large pot, heat vegetable oil to 350°F (175°C).
Coat and Fry the Onion Rings
Dip each onion ring into the batter, allowing excess to drip off. Carefully place the coated rings into the hot oil. Fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.
Prepare Cajun Mayonnaise
In a small bowl, combine mayonnaise and Cajun seasoning. Stir until well mixed.
Assemble the Bayou
On a serving plate, stack 2-3 onion rings, place a slice of Pepper Jack cheese on top, and drizzle with Louisiana hot sauce. Serve with a side of Cajun mayonnaise.
