Prepare the Beer Batter
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and well combined. Let sit for 15 minutes.

Heat the Oil
In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Batter the Fish
Dip each Walleye fillet into the beer batter, ensuring they are fully coated.

Fry the Fish
Carefully place the battered fish fillets into the hot oil, frying in batches to avoid overcrowding. Fry for about 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Cook the French Fries
In the same oil, fry the French fries according to package instructions until crispy and golden brown. Drain on paper towels.

Prepare the Tartar Sauce
Serve with your favorite house-made tartar sauce (recipe optional).
