Prepare the Batter
In a large mixing bowl, combine flour, cornstarch, baking powder, garlic powder, onion powder, black pepper, and salt. Mix well. Gradually add cold water, whisking until a smooth batter forms.

Heat the Oil
In a deep pot or fryer, heat vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Coat the Pickles
Dredge the dill pickle slices in the batter, ensuring they are fully coated.

Fry the Pickles
Carefully drop the battered pickles into the hot oil in batches. Fry until golden brown and crispy, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.

Serve hot with house-made Ranch dressing on the side.
