1. Prepare the Pickled Red Onions

Thinly slice the red onion and place it in a bowl. Combine vinegar, sugar, and a pinch of salt in a separate bowl and stir until the sugar dissolves. Pour the mixture over the onions and let them sit for at least 30 minutes.

2. Cook the Bacon

In a skillet over medium heat, cook the smoked bacon until crispy. Remove and drain on paper towels. Once cooled, crumble the bacon into small pieces.
