Prepare the Wings
Preheat your oven to 400°F (200°C). In a large bowl, toss the chicken wings with olive oil, salt, and black pepper until evenly coated.

Bake the Wings
Arrange the wings in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until crispy and cooked through.

Prepare the Buffalo Sauce
In a small saucepan over low heat, melt the butter and then add the hot sauce. Stir until well combined and heated through.

Fry the Wings
In a deep skillet or fryer, heat oil to 350°F (175°C). Once the wings are baked, fry them in batches for 2-3 minutes until they are golden and crispy.

Toss in Sauce
Transfer the fried wings to a large bowl and pour the Buffalo sauce over them. Toss until they are fully coated.

Serve the chicken wings hot with celery sticks and your choice of blue cheese or Ranch dressing.
