Preparation Steps

    Prepare the Walleye

    Preheat your oven to 400°F (200°C). In a shallow dish, combine the grated Parmesan cheese and breadcrumbs. Dip each walleye fillet into the mixture, coating both sides evenly.

    Cook the Walleye

    Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the coated walleye fillets and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from skillet and set aside.

    Toast the Panini

    In the same skillet, add the remaining olive oil and place the slices of panini bread. Toast each side until golden brown.

    Assemble the Sandwich

    Spread house tartar sauce on one side of each toasted slice of bread. Place the cooked walleye fillet on one slice, top with shredded lettuce, and squeeze fresh lemon juice over the top. Close the sandwich with the other slice of bread.

    Slice the sandwich in half and serve immediately with extra lemon wedges on the side.
