Cooking Instructions
- 1
Prepare the Potatoes
Preheat the oven to 400°F (200°C). Wash the fingerling potatoes and halve them lengthwise. Toss them in a bowl with 2 tablespoons of olive oil, salt, and black pepper. Spread them evenly on a baking sheet and roast in the oven for about 25-30 minutes, or until golden and tender.
- 2
Grill the Asparagus
While the potatoes are roasting, prepare the asparagus. Trim the ends of the asparagus and toss them in a bowl with 1 tablespoon of olive oil, salt, and black pepper. Grill the asparagus on medium-high heat for about 5-7 minutes, turning occasionally, until they are tender and slightly charred.
- 3
Cook the Beef Tenderloin
Season the beef tenderloin with salt and black pepper. Preheat a grill or grill pan over high heat. Once hot, add the beef tenderloin and cook for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached. Remove from the grill and let it rest for 5 minutes.
- 4
Serve
Slice the beef tenderloin and serve it alongside the grilled asparagus and roasted fingerling potatoes. Optionally, drizzle with blue cheese sauce if desired.
