Prepare the Mustard Sauce
In a small bowl, mix together three types of mustard (yellow, Dijon, and spicy brown) to create your three mustard sauce. Adjust the ratios to your taste.

Assemble the Sandwich
Slice the panino bread lengthwise without cutting all the way through. Spread a generous amount of the three mustard sauce on both sides of the bread. Layer the black forest ham, braised Duroc pork, Swiss cheese, and dill pickle slices inside the bread.

Toast the Sandwich
Heat a skillet over medium heat and add olive oil. Once hot, place the assembled sandwich in the skillet. Press down with a spatula or a sandwich press. Cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.

Remove the sandwich from the skillet, let it cool for a minute, then slice in half and serve immediately.
