1. Cook the Pasta
In a large pot of boiling salted water, cook the rotini pasta according to package instructions until al dente. Drain and set aside.
2. Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell peppers. Sauté until the vegetables are softened, about 5-7 minutes.
3. Add Chicken and Sauce
Stir in the shredded rotisserie chicken, diced tomatoes (with juice), heavy cream, and Cajun seasoning. Mix well and allow to simmer for 5 minutes until heated through.
4. Combine and Season
Add the cooked rotini pasta to the skillet and toss everything together until the pasta is well coated with the sauce. Season with salt and black pepper to taste.
5. Serve
Remove from heat and serve hot. Garnish with additional Cajun seasoning if desired.
