Prepare the Wontons

Make the Filling
In a bowl, combine ground pork, chopped shrimp, chopped green onions, soy sauce, cornstarch, salt, and black pepper. Mix well until all ingredients are evenly combined.

Fill the Wontons
Take a wonton wrapper and place a teaspoon of filling in the center. Moisten the edges with water, fold the wrapper over to form a triangle, and press to seal. Then, bring the two corners of the triangle together and seal with water. Repeat until all filling is used.
Prepare the Soup

Cook the Broth
In a large pot, combine chicken broth, soy sauce, sesame oil, sliced green onions, minced garlic, and grated ginger. Bring to a simmer over medium heat.

Cook the Wontons
Once the broth is simmering, carefully add the wontons to the pot. Cook for about 5-7 minutes or until the wontons float to the top and are cooked through.
Serve the Dish

Assemble the Bowl
In serving bowls, add a handful of bean sprouts. Ladle the wonton soup over the bean sprouts and top with halved boiled eggs. Drizzle with chili oil to taste.
