    Sauté the Vegetables

    In a large skillet, heat a small amount of oil over medium heat. Add the chopped mushrooms and onion. Sauté until the mushrooms are tender and the onions are translucent, about 5-7 minutes. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

    Combine Ingredients

    In a large mixing bowl, combine the sautéed vegetables with cooked brown rice, whole wheat breadcrumbs, shredded low fat cheese, soy sauce, salt, black pepper, and dried oregano. Mix well until all ingredients are thoroughly combined.

    Add Binding Agent

    Add the beaten egg to the mixture. Stir until the egg is fully incorporated and the mixture can hold together when formed into patties.

Cooking

    Form the Patties

    Take a handful of the mixture and form it into a patty shape, about 1/2 inch thick. Repeat until all the mixture is used.

    Cook the Patties

    In the same skillet, add a little more oil if necessary and heat over medium heat. Place the patties in the skillet and cook for about 4-5 minutes on each side, or until they are golden brown and heated through.

    Serve

    Once cooked, remove the patties from the skillet and let them cool slightly. Serve them on whole grain buns or with your choice of sides.
