Make the Teriyaki Marinade
In a medium bowl, whisk together soy sauce, brown sugar, rice vinegar, minced garlic, grated ginger, sesame oil, cornstarch, and water until well combined.

Marinate the Chicken
Place the boneless chicken breasts in a large zip-top bag or a shallow dish. Pour the teriyaki marinade over the chicken, ensuring that all pieces are coated. Seal the bag or cover the dish, and refrigerate for at least 1 hour, or overnight for best results.

Cook the Chicken
Preheat your grill or stovetop skillet over medium-high heat. Remove the chicken from the marinade, letting any excess drip off. Season both sides with salt and black pepper. Grill or cook the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).

Thicken the Marinade
While the chicken is cooking, pour the remaining marinade into a small saucepan. Bring it to a boil over medium heat, then reduce to a simmer for about 5 minutes, until it thickens slightly.

Once the chicken is cooked through, remove it from the heat and let it rest for a few minutes. Slice the chicken, drizzle with the thickened teriyaki sauce, and garnish with sesame seeds and chopped green onions before serving.
