Prepare the Broth

In a large pot, combine the chicken broth, soy sauce, sesame oil, minced garlic, and minced ginger. Bring to a simmer over medium heat.
Cook the Noodles

Once the broth is simmering, add the saimin noodles and cook according to the package instructions until al dente, usually about 3-5 minutes. Stir occasionally to prevent sticking.
Prepare the Toppings

While the noodles are cooking, in a separate pan, fry the sliced Spam until crispy and golden brown. Set aside.

Assemble the Saimin

Once the noodles are cooked, ladle the broth and noodles into bowls.

Top each bowl with sliced char siu, crispy Spam, fried eggs, chopped green onions, and chopped Chinese cabbage.
