Method
Preparation
- 1
Prepare the Marinade
In a large bowl, combine olive oil, lemon juice, minced garlic, chopped thyme, chopped rosemary, salt, black pepper, paprika, and onion powder. Whisk until well combined.
- 2
Marinate the Chicken
Place the whole chicken in a large resealable plastic bag or a dish. Pour the marinade over the chicken, making sure it is evenly coated. Seal the bag or cover the dish, and refrigerate for at least 2 hours, preferably overnight.
Cooking
- 3
Preheat the Rotisserie
Preheat your rotisserie according to the manufacturer's instructions.
- 4
Prepare the Chicken for Rotisserie
Remove the marinated chicken from the refrigerator. Let it sit at room temperature for about 30 minutes before cooking. This helps the chicken cook evenly.
- 5
Cook the Chicken
Secure the chicken onto the rotisserie spit and place it in the preheated rotisserie. Cook the chicken according to the rotisserie instructions, usually about 1 to 1.5 hours, or until the internal temperature reaches 165°F (75°C).
- 6
Rest and Serve
Once cooked, carefully remove the chicken from the rotisserie and let it rest for about 10-15 minutes before carving. Serve warm.
