Base Ingredients

Flavoring Ingredients

Method

Preparation of the Ice Cream Base

  1. 1

    Combine Dairy Ingredients

In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is warm but not boiling.

  2. 2

    Mix Sugar and Egg Yolks

In a separate bowl, whisk together the granulated sugar and egg yolks until the mixture becomes pale and slightly thickened.

  3. 3

    Temper the Egg Yolks

Slowly pour about a cup of the warm milk and cream mixture into the egg yolk mixture while whisking continuously to prevent the eggs from cooking.

  4. 4

    Combine Mixtures

Pour the tempered egg yolk mixture back into the saucepan with the remaining milk and cream. Stir in a pinch of salt.

  5. 5

    Cook the Mixture

Cook over medium heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 5-7 minutes).

  6. 6

    Add Vanilla

Remove from heat and stir in the vanilla extract.

  7. 7

    Cool the Base

Transfer the mixture to a bowl, cover with plastic wrap (pressing it directly against the surface to prevent a skin from forming), and refrigerate until completely chilled (about 2 hours or overnight).

Churning and Adding Flavor

  1. 8

    Churn the Ice Cream

Once chilled, pour the ice cream base into an ice cream maker and churn according to the manufacturer's instructions (usually about 20-25 minutes).

  2. 9

    Add Chocolate Chips

During the last 5 minutes of churning, add the chocolate chips to the ice cream maker to incorporate them evenly.

Freezing

  1. 10

    Transfer to Container

Transfer the churned ice cream into an airtight container and smooth the top with a spatula.

  2. 11

    Freeze

Cover with a lid or plastic wrap and freeze for at least 4 hours or until firm.
