    Prepare the Beef Liver

    Rinse the beef liver under cold water and pat it dry with paper towels. Trim any excess membrane or connective tissue if necessary.

    Slice the Onion

    Peel the onion and slice it into thin rings. Set aside.

    Prepare the Bacon

    Cut the bacon slices in half if they are too long for the grill. You can also chop them into smaller pieces if you prefer.

Cooking

    Grill the Bacon

    Preheat your grill to medium heat. Place the bacon slices on the grill and cook for about 5-7 minutes, flipping halfway through until crispy. Remove from the grill and set aside.

    Grill the Onions

    In the same grill, add the onion rings. Grill for about 4-5 minutes, turning occasionally, until they are softened and have nice grill marks. Remove from the grill and set aside.

    Grill the Beef Liver

    Brush the beef liver with olive oil and season with salt and black pepper. Place it on the grill and cook for about 3-4 minutes on each side, or until the inside is no longer pink and reaches an internal temperature of 160°F (71°C).

Assembly

    Plate the Dish

    Once the beef liver is cooked, place it on a serving plate. Top it generously with the grilled onions and crispy bacon. Serve immediately.
