For the Roast Beef

    Prepare the Beef

    Preheat the oven to 325°F (163°C).

    Season the Beef

    Rub the beef roast with olive oil, then season generously with salt, black pepper, garlic powder, and onion powder.

    Roast the Beef

    Place the beef roast in a roasting pan and roast in the preheated oven for about 1.5 to 2 hours, or until it reaches an internal temperature of 135°F (57°C) for medium-rare.

    Rest the Beef

    Remove the roast from the oven and let it rest for 15-20 minutes before slicing.

    Prepare the Broth

    In a saucepan, combine the reserved beef broth with the juices from the roasting pan. Bring to a simmer over medium heat.

For the Sandwiches

    Slice the Beef

    After resting, slice the beef roast thinly against the grain.

    Prepare the Rolls

    Cut the French rolls in half and place a generous amount of sliced roast beef on the bottom half of each roll.

    Add Cheese

    Place a slice of provolone cheese on top of the beef for each sandwich.

    Melt the Cheese (optional)

    If desired, place the assembled sandwiches under a broiler for 1-2 minutes to melt the cheese slightly.

    Garnish

    Top with fresh parsley if using, then place the top half of the roll on each sandwich.

For the Au Jus

    Combine Ingredients

    In a small saucepan, combine the beef broth, Worcestershire sauce, and black pepper. Heat over medium heat until warmed through.

    Serve

    Serve the au jus alongside the French dip sandwiches for dipping.
