Preparation of Fish Fillet

    Prepare the Batter

    In a mixing bowl, combine the all-purpose flour, cornstarch, salt, and black pepper. Mix well.

    Make the Egg Mixture

    In a separate bowl, whisk together the egg and milk until smooth.

    Coat the Fish

    Dip each Mahimahi fillet into the egg mixture, allowing excess to drip off, then coat it in the flour mixture, pressing lightly to adhere.

Cooking

    Heat the Oil

    In a large skillet, heat the vegetable oil over medium-high heat until hot.

    Fry the Fish

    Carefully place the battered Mahimahi fillets in the hot oil. Fry for about 3-4 minutes on each side or until golden brown and cooked through.

Assembling the Sandwich

    Toast the Brioche Buns

    In a separate skillet, melt butter over medium heat. Place the brioche buns cut-side down and toast until golden brown.

    Add Toppings

    On the bottom half of each toasted bun, place a lettuce leaf, followed by the fried fish fillet. Add slices of tomato and a generous dollop of tartar sauce.

    Serve with Lemon

    Top with the other half of the bun and serve with lemon wedges on the side.
