Chicken Preparation

Marinate the Chicken
In a small bowl, mix the olive oil, garlic powder, salt, and black pepper. Rub this mixture all over the chicken breasts and let them marinate for at least 30 minutes.

Grill the Chicken
Preheat the grill to medium-high heat. Grill the marinated chicken breasts for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from grill and let rest for 5 minutes before slicing.

Prepare the Vegetables
While the chicken is grilling, wash and chop the mixed salad greens, cherry tomatoes, cucumber, red bell pepper, and carrot. Slice the cucumber and red bell pepper into thin strips and grate the carrot.

Assemble the Salad
In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red bell pepper, and carrot. Drizzle with balsamic vinaigrette and toss to combine.
Serving

Plate the Dish
On a serving plate, create a bed of the tossed salad and place the sliced grilled chicken breast on top. Optionally, drizzle a little more balsamic vinaigrette over the chicken.
