Grill the Filling
In a skillet over medium-high heat, add a little oil and sauté the chopped onions until translucent, about 3-4 minutes. Add in the green bell pepper and mushrooms, cooking for another 4-5 minutes until softened. Stir in the roast beef and cook until heated through, approximately 2-3 minutes. Season with salt and black pepper to taste.

Mix the Sauce
In a small bowl, combine mayonnaise, horseradish sauce, Worcestershire sauce, garlic powder, salt, and black pepper. Stir until well mixed and set aside.

Build the Sandwich
On the unbuttered side of two slices of sourdough, spread the special sauce. Top with the grilled roast beef mixture and sprinkle cheddar cheese on top. Place the other two slices of bread on top, buttered side up.

Slice and Serve
Remove the sandwiches from the grill, slice in half, and serve warm with extra special sauce on the side if desired.
