Cook the Beef
In a large pot over medium heat, add the ground beef. Cook until browned, breaking it apart with a spoon, about 5-7 minutes.

Add Tomatoes and Beans
Stir in the canned diced tomatoes (with juice), tomato sauce, and drained kidney beans into the pot.

Season the Chili
Add chili powder, ground cumin, salt, and black pepper. Stir to combine.

Simmer the Chili
Pour in 1 cup of water, bring to a boil, and then reduce the heat to low. Cover and let simmer for about 30 minutes, stirring occasionally.

Rinse the Rice
Rinse 1 cup of long-grain white rice under cold water until the water runs clear.

Cook the Rice
In a saucepan, combine the rinsed rice, 2 cups of water, and 0.5 teaspoon of salt. Bring to a boil over high heat.

Simmer and Fluff
Once boiling, reduce the heat to low, cover, and let it simmer for 18-20 minutes. After cooking, remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

Serve the Chili
In a serving bowl, place a generous scoop of cooked rice. Top with a ladle of chili.

Sprinkle shredded cheddar cheese on top of the chili. Serve hot and enjoy!
