Crust

Method

Crust Preparation

  1. 1

    Prepare the crust

Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.

  2. 2

    Form the crust

Press the mixture into the bottom of a 9-inch springform pan evenly. Bake in the preheated oven for 8-10 minutes until set and lightly golden. Remove from the oven and let cool.

Filling Preparation

  1. 3

    Mix the filling

In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.

  2. 4

    Add sugar and sour cream

Gradually add the granulated sugar and sour cream to the cream cheese, mixing until fully incorporated.

  3. 5

    Flavoring

Mix in the vanilla extract, followed by the eggs one at a time, ensuring each egg is fully mixed in before adding the next.

  4. 6

    Add flour

Add the all-purpose flour and mix until just combined. Avoid overmixing to keep the texture smooth.

Baking the Cheesecake

  1. 7

    Combine and bake

Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula.

  2. 8

    Water bath (optional)

For a creamier texture, wrap the bottom of the springform pan with aluminum foil and place it in a larger baking dish filled with hot water, creating a water bath.

  3. 9

    Bake

Bake in the preheated oven for 55-65 minutes, or until the edges are set and the center slightly jiggles. Turn off the oven and let the cheesecake cool inside for 1 hour.

  4. 10

    Chill

After cooling, refrigerate the cheesecake for at least 4 hours, preferably overnight, before serving.

Topping Preparation

  1. 11

    Prepare the topping

If desired, just before serving, wash the fresh berries and toss them with powdered sugar in a bowl to coat lightly.

  2. 12

    Serve

Slice the chilled cheesecake and top with the berry mixture if using. Enjoy!
