Apple Lumpia Preparation

Prepare the Apples
Peel, core, and slice the Granny Smith apples into thin strips. Place them into a mixing bowl.

Mix the Filling
Add the brown sugar, ground cinnamon, and lemon juice to the apples. Toss together until the apples are evenly coated.

Assemble the Lumpia
Take a lumpia wrapper and place about 2 tablespoons of the apple filling near one edge. Fold the sides over the filling and roll tightly. Seal the edge with a dab of water. Repeat for all wrappers.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Carefully add the lumpia to the hot oil, frying in batches if necessary. Fry until golden brown and crispy, about 3-4 minutes per side. Remove from oil and drain on paper towels.
