Preparation of Coffee Mixture

Brew Coffee
Brew 240 ml of espresso or strong coffee. Once brewed, allow it to cool to room temperature.

Whisk Egg Yolks and Sugar
In a large mixing bowl, whisk together the 4 egg yolks and 100 g of granulated sugar until the mixture is pale and creamy.

Add Mascarpone
Gently fold in 500 g of mascarpone cheese until well combined and smooth.

Whip Heavy Cream
In a separate bowl, whip 250 ml of heavy cream with 1 tsp of vanilla extract until soft peaks form.

Combine Mixtures
Carefully fold the whipped cream into the mascarpone mixture until fully incorporated, being careful not to deflate the whipped cream.

Soak Ladyfingers
Quickly dip each ladyfinger (24 pieces) in the cooled coffee, ensuring they are soaked but not soggy.

Layering
In a 9x13 inch dish, layer half of the soaked ladyfingers at the bottom. Spread half of the mascarpone cream mixture over the ladyfingers.

Repeat Layers
Repeat with another layer of soaked ladyfingers and top with the remaining mascarpone cream mixture.

Chill
Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.

Serve
Before serving, dust the top with 2 tablespoons of cocoa powder and sprinkle with chocolate shavings (50 g). Cut into squares and enjoy!
