Method

Preparing the Prime Rib

1

Season the Prime Rib

Rub the prime rib roast with olive oil, then coat it evenly with kosher salt, black pepper, garlic powder, and dried thyme. Ensure all sides are well-seasoned.

2

Preheat the Oven

Preheat your oven to 450°F (230°C).

3

Roast the Prime Rib

Place the seasoned prime rib in a roasting pan, bone side down. Roast in the preheated oven for 20 minutes to create a crust. Then reduce the temperature to 325°F (160°C) and continue roasting for approximately 15-20 minutes per pound, or until the internal temperature reaches 135°F (57°C) for medium-rare.

4

Rest the Meat

Once the prime rib is cooked, remove it from the oven and tent it loosely with aluminum foil. Let it rest for at least 20 minutes before slicing.

Making the Au Jus

5

Prepare the Au Jus

In a saucepan, combine beef broth, red wine, and Worcestershire sauce. Bring to a simmer over medium heat.

6

Thicken the Au Jus

In a small bowl, mix cornstarch with water until smooth. Gradually whisk this mixture into the simmering broth. Cook for an additional 5-10 minutes until the sauce thickens slightly.

7

Strain the Au Jus

If desired, strain the au jus through a fine-mesh sieve to remove any solids. Keep warm until serving.

Preparing the Creamed Horseradish

8

Mix the Creamed Horseradish

In a bowl, combine prepared horseradish, sour cream, mayonnaise, lemon juice, and salt. Stir until well blended. Adjust seasoning to taste and refrigerate until ready to serve.
