Preparation
Prepare the Marinade
In a large mixing bowl, combine the olive oil, soy sauce, brown sugar, garlic powder, paprika, black pepper, salt, cayenne pepper, and lemon juice. Whisk together until the sugar is dissolved and the marinade is well combined.
Marinate the Ribs
Place the pork and beef ribs in a large resealable plastic bag or a dish. Pour the marinade over the ribs, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight.
Cooking
Preheat the Grill
Preheat your grill to medium heat (about 180°C or 350°F).
Cook the Ribs
Remove the ribs from the marinade and let excess marinade drip off. Place the ribs on the grill and cook for about 20-30 minutes, turning occasionally, until the ribs are tender and have a nice char. Use a meat thermometer to ensure the internal temperature reaches at least 75°C (165°F).
Serve
Once the ribs are done, remove them from the grill and let them rest for about 5 minutes. Serve with coleslaw and corn on the cob.
