Prepare the Onions

    Peel the large onions and slice them into 1/4-inch thick rings. Carefully separate the rings from each other and place them on a plate.

Make the Batter

    Combine Dry Ingredients

    In a large mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper until well blended.

    Add Wet Ingredients

    Gradually add the cold water and beer (if using) to the dry mixture, whisking continuously until you achieve a smooth batter. The batter should be thick enough to coat the onion rings.

Fry the Onion Rings

    In a deep pot or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
