Method

Filet Preparation

    Prepare the Filet

    Preheat your grill or stovetop skillet over medium-high heat. Rub the filet mignon with olive oil, salt, and black pepper on both sides.

    Cook the Filet

    Place the filet on the grill or skillet and cook for about 5-7 minutes on each side for medium-rare doneness, adjusting time according to your preferred doneness.

    Stuff with Goat Cheese

    In the last 2 minutes of cooking, top the filet with goat cheese and cover to melt.

Wild Rice Preparation

    Cook the Wild Rice

    In a medium saucepan, bring 2 cups of water or chicken broth to a boil. Add 1 cup of wild rice and 0.5 tsp of salt. Reduce heat to low, cover, and simmer for 40-45 minutes until rice is tender and liquid is absorbed.

White Wine Butter Sauce Preparation

    Make the Sauce

    In a small saucepan, melt 4 tbsp of butter over medium heat. Add 2 tbsp of minced garlic and sauté until fragrant, about 1 minute.

    Add Wine and Lemon Juice

    Pour in 0.5 cup of white wine and 1 tbsp of lemon juice. Bring to a simmer and let cook for about 5-7 minutes until slightly reduced. Stir in 1 tbsp of chopped parsley before serving.

Grilled Shrimp Popsicle Preparation

    Prepare the Shrimp

    If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Thread 4 shrimp onto each skewer. Brush with olive oil and season with salt and black pepper.

    Grill the Shrimp

    Grill the shrimp skewers over medium-high heat for about 2-3 minutes on each side until they turn pink and opaque.
