Directions

  1. 1

    Prepare the Potatoes

Wash the red-skinned potatoes thoroughly under running water to remove any dirt. Cut them into quarters or halves, depending on their size, to ensure even cooking.

  2. 2

    Boil the Potatoes

Place the cut potatoes in a large pot and cover them with cold water. Add 1/2 tsp of salt. Bring the water to a boil over high heat, then reduce to medium heat and simmer for about 15-20 minutes, or until the potatoes are fork-tender.

  3. 3

    Prepare the Garlic

While the potatoes are boiling, peel the garlic cloves. You can leave them whole for roasting or mince them for a stronger flavor.

  4. 4

    Cook the Garlic

In a small saucepan, melt 1 tablespoon of the butter over medium heat. Add the garlic and sauté for 2-3 minutes, until fragrant and lightly golden. Be careful not to burn the garlic.

  5. 5

    Drain the Potatoes

Once the potatoes are cooked, drain them in a colander and return them to the pot. Allow them to steam for a minute to remove excess moisture.

  6. 6

    Mash the Potatoes

Using a potato masher or a fork, mash the potatoes until they reach your desired consistency. For creamier potatoes, you can use a potato ricer.

  7. 7

    Add Butter and Milk

Add the remaining butter, sautéed garlic, and whole milk to the mashed potatoes. Stir well to combine until the ingredients are fully incorporated and the mixture is creamy.

  8. 8

    Season the Mash

Season the mashed potatoes with salt and black pepper to taste. Mix in the fresh chives for added flavor and garnish.

  9. 9

    Serve

Transfer the mashed potatoes to a serving dish and optionally top with a pat of butter or additional chives for garnish. Serve warm.
