    Prepare the Battering Mixture

    In a large bowl, mix together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until the mixture is smooth and well-combined.

    Heat the Oil

    In a deep frying pan or a deep fryer, heat the oil to 350°F (175°C). You can test the temperature by dropping a small amount of batter into the oil; it should sizzle and float to the top.

    Batter and Fry the Cod

    Dip each cod fillet into the batter, ensuring they are fully coated. Carefully place the battered cod into the hot oil and fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Tartar Sauce Preparation

    Mix the Tartar Sauce

    In a small bowl, combine the mayonnaise, chopped dill pickles, capers, lemon juice, salt, and black pepper. Stir well until all ingredients are mixed thoroughly. Adjust seasoning if necessary.

    Prepare the Buns

    Toast the burger buns lightly on a skillet or in the oven until golden brown.

    Assemble the Sandwich

    On the bottom half of each toasted bun, spread a generous amount of tartar sauce. Layer on a lettuce leaf, a slice of tomato, a piece of fried cod, a slice of cheddar cheese, and a few slices of red onion. Top with the other half of the bun.
