Crab Cake Preparation

    Prepare the Mixture

    In a mixing bowl, combine the crab meat, breadcrumbs, mayonnaise, mustard, egg, Old Bay seasoning, salt, and pepper. Mix gently until well combined.

    Form the Cakes

    Shape the mixture into small patties, about 2-3 inches in diameter. You should get around 4-6 crab cakes.

    Cook the Crab Cakes

    Heat olive oil in a skillet over medium heat. Add the crab cakes and cook for about 4-5 minutes on each side or until golden brown and cooked through. Remove and keep warm.

Grilled Asparagus Preparation

    Prepare the Asparagus

    Wash the asparagus and trim the tough ends. In a bowl, toss the asparagus with olive oil, salt, and pepper.

    Grill the Asparagus

    Preheat a grill or grill pan over medium-high heat. Grill the asparagus for about 5-7 minutes, turning occasionally until tender and slightly charred. Remove from heat.

Hollandaise Sauce Preparation

    Prepare the Butter

    Melt the butter in a small saucepan and set aside to cool slightly.

    Whisk the Egg Yolks

    In a heatproof bowl, whisk together the egg yolks and lemon juice until pale and thick.

    Combine and Cook

    Place the bowl over a pot of simmering water (double boiler). Slowly whisk in the melted butter until the sauce thickens. Season with salt and a pinch of cayenne pepper.

Assembly

    Plate the Dish

    On each plate, place a crab cake, top with a portion of grilled asparagus, and drizzle generously with hollandaise sauce. Serve immediately.
