Steak Preparation

Prepare the Steak
Remove the filet mignon steaks from the refrigerator and allow them to come to room temperature for about 30 minutes. This ensures even cooking.

Season the Steak
Generously season both sides of the steaks with salt and black pepper.

Heat the Pan
In a large skillet, heat the olive oil over medium-high heat until it shimmers. Make sure it’s hot enough to sear the meat.

Sear the Steaks
Add the seasoned filet mignon steaks to the hot skillet. Sear for about 4-5 minutes on one side until a crust forms.

Flip and Add Flavor
Flip the steaks over and add butter, garlic cloves (smashed), and fresh thyme to the pan. Continue to cook for another 4-5 minutes for medium-rare doneness.

Check for Doneness
Use a meat thermometer to check the internal temperature. For medium-rare, it should read 130°F (54°C).

Rest the Steaks
Remove the filet mignon from the skillet and place them on a cutting board. Let them rest for 5-10 minutes before slicing to allow the juices to redistribute.
