Cake Preparation

Melt Chocolate and Butter
Preheat the oven to 190°C (375°F). In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water or in the microwave, stirring until smooth. Remove from heat and let cool slightly.

Mix Sugar and Eggs
In a separate bowl, whisk together the granulated sugar and large eggs until the mixture is pale and slightly thickened, about 2-3 minutes.

Add Dry Ingredients
Sift the all-purpose flour into the chocolate mixture and add the vanilla extract. Fold the mixture gently until just combined, being careful not to overmix.

Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling them about 2/3 full.

Bake the Fondants
Place the ramekins in the preheated oven and bake for 12-14 minutes, until the edges are firm but the center is still soft.

Cool and Unmold
Remove the ramekins from the oven and let them cool for 1-2 minutes. Carefully run a knife around the edges, then invert onto plates.

Serve the Fondant
Serve each warm chocolate fondant with a scoop of vanilla ice cream on the side. Dust with cocoa powder if desired.
