Berries & Cream Cheesecake Recipe

    Prepare the crust

    Preheat your oven to 350°F (175°C). In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Bake in the preheated oven for 8-10 minutes or until lightly golden. Remove from the oven and let it cool.

    Make the cheesecake filling

    In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy. Gradually add granulated sugar and mix until well combined. Add the sour cream and vanilla extract, mixing until smooth. Add eggs, one at a time, mixing on low speed after each addition. Finally, add the all-purpose flour and mix until just incorporated.

    Bake the cheesecake

    Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour. Remove from the oven and let it cool completely at room temperature.

    Chill the cheesecake

    Once cooled, refrigerate the cheesecake for at least 4 hours or overnight to set completely.

Toppings

    Prepare the toppings

    Before serving, wash and prepare the fresh berries. If desired, slice larger strawberries. To serve, top each slice of cheesecake with a generous amount of mixed berries, a drizzle of raspberry sauce, and a dollop of whipped cream.
