For the Almond Crusted Walleye

    Prepare the Walleye

    Rinse the walleye fillets under cold water and pat dry with paper towels. Season both sides with salt and black pepper.

    Set Up Breading Station

    In one bowl, place the all-purpose flour. In a second bowl, beat the eggs. In a third bowl, place the finely chopped almonds.

    Bread the Fillets

    Coat each walleye fillet first in flour, shaking off excess. Then dip into the beaten eggs, allowing excess to drip off. Finally, coat with the chopped almonds, pressing gently to adhere.

    Pan-Fry the Fillets

    In a large skillet, heat olive oil over medium heat. Once hot, carefully place the almond-crusted walleye fillets in the skillet. Cook for about 4-5 minutes on each side or until golden brown and cooked through.

    Drain and Serve

    Once cooked, remove the fillets from the skillet and place them on a paper towel-lined plate to drain excess oil. Serve immediately.

For the Jalapeno Tartar Sauce

    Mix the Ingredients

    In a medium bowl, combine the mayonnaise, finely chopped dill pickles, finely chopped jalapeno, lemon juice, salt, and black pepper.

    Combine Well

    Stir the mixture well until all ingredients are combined evenly. Adjust seasoning to taste.

    Chill and Serve

    Cover the bowl and refrigerate the tartar sauce for at least 30 minutes before serving to enhance the flavors.
