Prepare the Peppers
Preheat your oven to 400°F (200°C). Wash and dry the bell peppers. Cut them in half, remove the seeds and the stems.

Make Garlic Oil
In a small saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes. Remove from heat.
Cooking

Roast the Peppers
Place the pepper halves on a baking sheet, cut side up. Drizzle the garlic oil evenly over the peppers, and season with salt, black pepper, dried oregano, and red pepper flakes. Roast in the preheated oven for 25-30 minutes, or until the peppers are tender and slightly charred.

Finish with Fresh Herbs
Remove the peppers from the oven and let them cool slightly. Before serving, sprinkle with chopped fresh parsley and basil.
