    Prepare the Meat

    In a large pot, heat a little olive oil over medium heat. Season the pork shoulder and beef chuck with salt and black pepper. Brown the meat on all sides.

    Add the chopped onion, carrot, and celery to the pot. Sauté until the vegetables are softened.

    Stir in minced garlic, oregano, and bay leaves. Cook for another minute until fragrant.

    Pour in the Valpolicella wine and Amarone wine, scraping the bottom of the pot to release any browned bits.

    Add the dried grapes to the pot and bring the mixture to a simmer.

    Cover and let the mixture simmer for about 2 hours, or until the meat is tender.
