Wash the lemons thoroughly to remove any wax or pesticides. Use a vegetable peeler to remove the zest from the lemons, being careful to avoid the white pith, as it can make the limoncello bitter.

Place the lemon zest into a large glass jar or container and pour the vodka over the zest. Seal the jar tightly and store it in a cool, dark place for at least 2 weeks, shaking it gently every few days.

Combine and Strain
Once the infusion period is complete, strain the lemon zest from the vodka using a fine mesh strainer or cheesecloth. Discard the zest and combine the infused vodka with the simple syrup. Stir well to combine.

Pour the limoncello into clean, sterilized bottles. Seal them tightly and refrigerate. Allow the limoncello to chill for at least 24 hours before serving.
