Wash the mixed greens thoroughly under cold water, then spin dry or pat dry with a clean kitchen towel. Cut the cherry tomatoes in half, slice the cucumber and bell pepper into bite-sized pieces, and shred the carrot.

In a large mixing bowl, combine the mixed greens, cherry tomatoes, cucumber, bell pepper, and shredded carrot. Toss gently to mix the ingredients evenly.

Bake the Croutons
Spread the seasoned bread cubes in a single layer on a baking sheet. Bake for about 10-15 minutes, or until golden and crispy, stirring halfway through to ensure even browning. Remove from oven and let cool.
