Panna Cotta Preparation

Bloom the Gelatin

In a small bowl, combine the gelatin powder and water. Stir gently and let it sit for about 5 minutes until it becomes gelatinous.

Heat the Cream Mixture

In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat, stirring occasionally until the sugar dissolves and the mixture just begins to simmer. Do not let it boil.

Add Gelatin

Remove the saucepan from the heat and stir in the bloomed gelatin and vanilla extract until fully dissolved. Allow the mixture to cool slightly.

Pour into Molds

Pour the panna cotta mixture into individual serving cups or molds. Refrigerate for at least 4 hours, preferably overnight, until set.

Berry Sauce Preparation

Prepare the Berries

In a saucepan over medium heat, combine the mixed berries, granulated sugar, and lemon juice. Stir gently to combine.

Cook the Sauce

Cook the mixture for about 10 minutes, stirring occasionally until the berries break down and the sauce thickens slightly. Remove from heat and let it cool.

Serve

Once the panna cotta has set, remove it from the molds and serve with the berry sauce drizzled on top.
