    Prepare the crust

    In a large bowl, combine the all-purpose flour, powdered sugar, and salt. Add the cold cubed butter and mix until the mixture resembles coarse crumbs.

    Combine and chill

    Add the egg yolk and ice water to the mixture and stir until it forms a dough. Wrap in plastic wrap and refrigerate for at least 30 minutes.

    Bake the shell

    Preheat the oven to 350°F (175°C). Roll out the dough on a floured surface and fit it into a tart pan. Prick the bottom with a fork and bake for 20-25 minutes until golden. Let it cool.

Diplomat Cream

    Heat the milk

    In a saucepan, heat the milk with the split vanilla bean and its seeds until it just begins to simmer.

    Mix the egg mixture

    In a separate bowl, whisk together the sugar, eggs, and cornstarch until smooth.

    Combine and thicken

    Gradually add the hot milk to the egg mixture while whisking continuously. Return to the saucepan and cook over medium heat, stirring constantly until thickened.

    Cool the cream

    Remove from heat and let it cool. Once cooled, fold in the whipped heavy cream and bourbon until well combined.

Assembly

    Fill the tart shell

    Spread the mixed berry jam evenly over the tart shell.

    Add diplomat cream

    Spoon the diplomat cream over the jam layer, smoothing it out evenly.

    Top with berries

    Garnish with fresh mixed berries on top of the diplomat cream.
