Cooking Pasta

    Boil the Water

    In a large pot, bring salted water to a rolling boil.

    Cook the Spaghetti

    Add the spaghetti to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain the Pasta

    Once cooked, drain the spaghetti in a colander and set aside.

Making Tomato Coulis

    Prepare the Ingredients

    Wash the fresh tomatoes and chop them roughly. Peel and slice the garlic cloves.

    Cook the Tomatoes

    In a saucepan, heat the olive oil over medium heat. Add the garlic cloves and sauté until fragrant, about 1-2 minutes.

    Add Tomatoes and Seasoning

    Add the chopped tomatoes, salt, and black pepper to the saucepan. Stir well and let simmer for about 15-20 minutes until the tomatoes are soft.

    Blend the Coulis

    Remove from heat and add the fresh basil leaves. Blend the mixture until smooth using an immersion blender or a regular blender.

Plating

    Combine Pasta and Coulis

    In the pot, combine the drained spaghetti with the tomato coulis, tossing to coat the pasta evenly.

    Serve

    Plate the spaghetti and garnish with grated Parmesan cheese and lemon zest. Serve immediately.
