Lemon Basil Sorbet

    Prepare the Lemon Base

    Juice the fresh lemons until you have about 1 cup of lemon juice. Strain the juice to remove seeds and pulp.

    Combine Ingredients

    In a saucepan, combine 2 cups of water, 1 cup of sugar, and salt. Bring to a boil over medium heat, stirring until sugar dissolves. Remove from heat.

    Add Basil

    Add the fresh basil leaves to the sugar-water mixture. Let steep for about 20 minutes to infuse the basil flavor.

    Strain Mixture

    Strain the mixture to remove basil leaves. Combine the strained mixture with the lemon juice. Chill in the refrigerator for at least 1 hour.

    Churn the Sorbet

    Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Freeze

    Transfer the sorbet to a container and freeze for at least 2 hours or until firm.

Strawberry Sorbet

    Prepare the Strawberries

    Wash and hull the fresh strawberries. Purée them in a blender until smooth.

    In a separate bowl, combine the puréed strawberries, 3 cups of sugar, lemon juice, and 1 cup of water. Stir until the sugar is dissolved.

    Chill the Mixture

    Refrigerate the strawberry mixture for at least 1 hour to chill.
