    Peel and devein the shrimp. Rinse them under cold water and set aside.

    Finely chop the onion, garlic, tomato, carrot, and celery.

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.

Cooking

    Add Remaining Vegetables

    Add the chopped tomato, carrot, and celery to the pot. Stir and cook for about 5 minutes until softened.

    Incorporate the Stock

    Pour in the fish stock and add the bay leaf, paprika, salt, and black pepper. Bring to a gentle boil.

    Cook the Shrimp

    Add the prepared shrimp to the pot and cook for another 5-7 minutes until the shrimp are pink and cooked through.

    Remove the bay leaf and use an immersion blender to purée the soup until smooth and velvety.

    Stir in the coconut milk and heat gently, ensuring not to boil. Adjust seasoning as needed.
