Method

Preparing the Shrimp

    Marinate the Shrimp

    In a large bowl, combine the large shrimp, minced garlic, chopped cilantro, lime juice, salt, and black pepper. Mix well to ensure the shrimp are evenly coated. Cover and let marinate in the refrigerator for at least 30 minutes.

    Skewer the Shrimp

    After marinating, take the wooden skewers and thread the shrimp onto them, about 4-5 shrimp per skewer. Make sure to leave a little space between each shrimp.

Making the Coconut Lime Sauce

    Combine Ingredients

    In a small saucepan over medium heat, combine the coconut milk, lime zest, honey, and red chili flakes. Stir well and bring to a gentle simmer.

    Simmer the Sauce

    Allow the sauce to simmer for about 5-7 minutes, stirring occasionally, until slightly thickened. Taste and add salt as needed. Remove from heat and set aside.

Cooking the Shrimp Lollipops

    Grill the Shrimp

    Preheat your grill to medium-high heat. Place the shrimp skewers on the grill and cook for about 2-3 minutes on each side, or until the shrimp are pink and opaque.

    Remove the shrimp lollipops from the grill and arrange them on a serving platter. Drizzle the warm coconut lime sauce over the top, and garnish with additional chopped cilantro if desired. Serve immediately.
