For the Seared Scallops

Method

Preparing the Pea Purée

  1. 1

    Cook the Peas

In a saucepan, bring the vegetable broth to a simmer. Add the frozen peas and cook for about 3-5 minutes until tender.

  2. 2

    Blend the Peas

Transfer the cooked peas to a blender. Add mint leaves, lemon juice, salt, and pepper. Blend until smooth. If the purée is too thick, add a bit more vegetable broth to reach the desired consistency.

  3. 3

    Set Aside

Once blended, taste and adjust seasoning if necessary. Set the pea purée aside and keep warm.

Cooking the Scallops

  1. 4

    Prepare the Scallops

Pat the sea scallops dry with a paper towel. This helps achieve a good sear. Season both sides with salt and black pepper.

  2. 5

    Heat the Pan

In a large skillet, heat the olive oil over medium-high heat until it shimmers but is not smoking.

  3. 6

    Sear the Scallops

Add the scallops to the skillet, ensuring they are not overcrowded. Sear for about 2-3 minutes without moving them until a golden crust forms. Flip and cook for another 2-3 minutes until the other side is also golden and the scallops are opaque in the center.

  4. 7

    Serve

Remove scallops from the pan and let them rest for a minute. On each plate, place a generous spoonful of pea purée and top with seared scallops. Serve immediately.
